Although Pasqua’s central operations are based in more northerly reaches, the team source their entry-Sangiovese from the southerly end of Italy, in the boot of Puglia. Here the protracted sunlight hours ensure there’s always plenty of flavour to go around, even at this affordable level. Pasqua uses a gentle pressing regime for this Sangiovese to ensure the wine is not overly extracted, meaning that although the berry flavours are ripe, the tannins and mouthfeel are soft. Aging is for a minimum of six months before release.
