Pasqua takes an unconventional approach with their premium Lui Cabernet Sauvignon, which is not only vinified with elements of the appassimento process, but matured in ex-Hennessey Cognac barrels. The Cabernet Sauvignon and a small addition of Corvina fruit are from Pasqua’s Mai Dire Mai vineyard, high altitude in Veneto with a concentration of marine minerals in the soil. Half the parcel is separated at harvest and partially dried (as per Amarone wines), then blended with the other parcel to continue a slow fermentation in stainless steel. Maturation is completed over 12 months in re-toasted barrels that have previously housed Hennessey Cognacs.
2017
This is a rich and fleshy wine, layered with dark fruits, vanilla, pastry cream and baking spice. Sweet characters are balanced by savoury varietal notes from the Cabernet, of mountain herbs, hay and almonds. The palate is round, soft and velvety with a rich, spiced aftertaste and lingering smoky notes.
