Giuseppe Cipriani opened Harry’s Bar in 1931. Later to become a declared national landmark and the centre point of the eponymous Cipriani’s hotel, the bar gained fame immediately due to its post war glamour, San Marco location and exceptional bartenders. 

A key to its success was the warm atmosphere and lack of imposition – it became the place where artists and aristocrats could meet, fostering seminal moments that would inspire books and go down in history. Harry’s once claimed as regulars the likes of Ernest Hemmingway, Katherine Hepburn, Humphrey Bogart, Baron Philippe de Rothschild and Aristotle Onassis. 

Cipriani Drinks has formed around the famous and famously delicious concoctions that have been served at Harry’s Bar since the beginning. Starting with the classic, prebatched Bellini, the range is now supported by the other key drinks on Harry’s list. Each aims to bring a dash of the Harry’s Bar and Cipriani hotel experience into homes and restaurants all over the world.

Cipriani Bellini is a ready-to-serve sparkling cocktail produced by the Cipriani family, originating from the historic Harry’s Bar in Venice. First created in 1948 by Giuseppe Cipriani, the Bellini combines Italian sparkling wine with white peach purée, and remains one of the most recognised aperitif-style cocktails globally. Produced in Veneto, the bottled format replicates the original serve, delivering a balanced, low-alcohol (approx. 5.5% ABV) option designed for convenience without compromising authenticity. Positioned between wine and cocktail, it offers a fresh, aromatic and fruit-driven profile suited to both on- and off-premise occasions.

Production & Style:

Cipriani Bellini is produced in Veneto using a defined blend of approximately 80% Italian sparkling wine and 20% white peach purée, in line with the original Harry’s Bar recipe. Unlike many products in the category, the use of real peach purée — rather than nectar, concentrates or flavourings — gives the drink a naturally aromatic profile and a richer, more viscous texture. The use of white peach, traditionally cultivated in Northern Italy, provides a delicate stone fruit profile and soft texture, balanced by the acidity and effervescence of the wine component. The result is a lightly sparkling, fruit-driven style with moderate sweetness and low ABV. The presence of natural fruit solids means the bottle should be gently rolled prior to serving to redistribute the purée, a characteristic that reflects both minimal processing and ingredient integrity. 

Heritage:

The Bellini was created in 1948 at Harry’s Bar in Venice by Giuseppe Cipriani, founder of the iconic bar established in 1931 just off the Grand Canal. Originally conceived as a seasonal drink using fresh white peaches, it quickly became a defining element of Venetian hospitality culture. Cipriani named the cocktail after the 15th-century Venetian artist Giovanni Bellini, inspired by the soft pink tones found in his paintings, which resembled the colour of the drink. Over time, Harry’s Bar became an international destination, frequented by artists, writers and travellers, with the Bellini itself gaining global recognition as a symbol of Italian aperitivo culture. Today, it remains closely associated with the Cipriani family and their hospitality legacy. In 1983, Cipriani Drinks was established to bring these original recipes to a broader audience, with the Bellini remaining the flagship product. The cocktail continues to be produced by the Cipriani family and served across their global hospitality network.
