Sir Paz Estate is a boutique, family-owned producer in the Upper Yarra Valley, established in 1997 by the Zapris family. Set at around 260 metres above sea level on red volcanic soils, the estate produces cool-climate wines of purity, structure and finesse. All wines are made exclusively from estate-grown, hand-picked fruit, with a minimal intervention approach that allows site and season to shine. Under the guidance of viticulturist Clark Woodgate and led by Peter Zapris, the estate continues to evolve through thoughtful vineyard development, including new Pinot Noir plantings due for release from 2026. Alongside the wines, Sir Paz offers a distinctive cellar door and fully woodfired dining experience.

Terroir:

Sir Paz Estate is located in the cool-climate Yarra Valley, where elevation, ancient soils and an extended growing season combine to produce wines of purity, structure and finesse. Positioned in the Upper Yarra subzone, the vineyard benefits from warm days and cool nights, allowing grapes to ripen slowly while retaining natural acidity and freshness. As one of the Yarra Valley’s highest altitude single-estate vineyards, the site features a mix of volcanic and clay loam soils, providing excellent drainage and encouraging deep root development. Gentle slopes and careful canopy management further enhance fruit concentration and vineyard expression.

Heritage:

Sir Paz Estate was established in 1997 in the Upper Yarra Valley as the fulfilment of a long-held family promise. Around 70 years ago, the Zapris family left Greece, where winemaking had been part of family life, and migrated to Australia. As a 13-year-old, John Zapris promised his father, Evangelos, that one day the family would make wine again; Sir Paz was the realisation of that vow in the Yarra Valley. Now managed by John’s son Peter, the estate remains in the family. A more recent chapter is the expansion of the range through new Pinot Noir plantings, with the estate’s first Pinot Noir vintage due for release in 2026.

Philosophy:

At Sir Paz, the winemaking philosophy is centred on expressing the purity and character of the vineyard through a largely hands-on, minimal intervention approach. All fruit is hand-picked and handled gently in the winery, with limited fining or filtration, allowing varietal integrity, balance and elegance to come to the fore. Close attention to detail in both vineyard and cellar ensures each wine reflects the nuances of site and season, with a focus on refinement, freshness and structure. This philosophy is supported by an evolving estate program, including new plantings such as Pinot Noir, which signal a considered approach to growth while remaining firmly rooted in the character of the Upper Yarra.

People:

Sir Paz is a family driven estate led by Peter Zapris, second generation of the Zapris family. Guided by acclaimed vigneron and winemaker Clark Woodgate, the winery combines technical precision with a deep respect for vineyard expression and seasonal variation. Working closely with the Zapris family, Clark brings a thoughtful and hands-on approach to crafting wines of elegance and balance.

Beyond the Vine:

Beyond the vine, Sir Paz offers guests an immersive experience that extends well beyond wine tasting. Set against the picturesque backdrop of the Yarra Valley, visitors can enjoy estate-grown wines alongside seasonal dining, private events, live music and relaxed vineyard hospitality. The estate’s restaurant is centred around a wood-fired kitchen, with no gas or electric cooking. This reinforces the hands-on, traditional approach that complements the style and philosophy of the wines. The experience is designed to celebrate connection, food, wine and the beauty of the region in an authentic and welcoming setting.
