Sir Paz is the highest single estate in Yarra Ranges, with 30 acres of vineyards averaging around 290m altitude on the nutrient-rich, red volcanic soils of the Upper Yarra. The vineyards came into being in 1997 when John Zapris took action to honour a promise to his father, who had made wine in their homeland of Greece before they migrated to Australia in the 1960s. He planted the Wandin East family estate with Shiraz cuttings sourced from Dr Bailey Carrodus at Yarra Yering, at a time when the valley was still deciding if the variety was suited to the region, a hypothesis that has proved well worthwhile, especially in this zone.

Trial and tribulations followed this small enterprise as it evolved into wine production. Eventually other varieties followed, including Merlot, Chardonnay, Sauvignon Blanc and just a dash of Viognier. The latest plantings are a diverse selection of Pinot Noir clones, which will see their first bottling with the 2026 vintage.

To this day, Sir Paz is still a family affair. The is led by John’s son Peter Zapris, who takes a very active role. He’s supported by Yarra Valley veteran vigneron Clark Woodgate, who has brought a deep passion for sustainable viticulture and the Upper Yarra’s cool-climate peculiarities. Winemaking from 2025 is a collaboration between Clark and Peter Mackey (prior vintages were made by Adrian Santolin).

There is a focus here on intensity and individuality, particular to this unique climate and volcanic soil profile, where blocks are harvested up to 6 weeks later than the vineyards on the flats. Yields are low and 100% estate-grown fruit is hand-picked, the quality of the fruit paramount, while winemaking can somewhat take a back seat, nuanced to vintage and variety. This premium Yarra terroir and the heartfelt work here contributes to fruit with robust flavours and precise acidity, delivering elegant and complex wines with a genuine point of difference.
