The longest-established Australian domain of our portfolio, Sevenhill Cellars began in 1851 when Jesuits settled in the area and planted vines to produce sacramental wine. Described by Halliday as “One of the historical treasures of Australia”, the stone cellars are the oldest in the Clare Valley and have been continually operational since inception.
Along with the historic St Aloysius Church (which has been on the site since 1875) the sacramental wines remain in production, but most will recognise Sevenhill for its award- winning Grenache, Shiraz and Riesling wines. All the wines are made from estate-grown grapes, from some very old vines and newer plantings on an estate of just under 100 hectares. Winemaking is now under the expert direction of Will Shields, who joined in 2019 after earning his stripes in WA, where he received a string of accolades working at Vasse Felix and Clairault. Vineyard Manager Craig Richards has been on the ground for 25 years and focuses on biological farming principles, which incorporate sustainable practices that have low environmental impact and enhance the natural balance and health of the soil.
