Pasqua’s Black Label Amarone is a blend of Corvina, Rondinella, Corvinone and Negrara from the geographic area of Valpantena in the Valpolicella DOC. It’s made with the traditional appassimento technique, whereby hand-selected grapes from the harvest are laid down in Pasqua’s drying loft for around three months before they are pressed and made into wine. The drying process causes the grapes to lose around 40% of their weight and water, thus intensifying the flavours and body that remain in the concentrated grape juice in the berries. The raisin-like grapes are pressed and fermented as a traditional red wine would be, but this occurs in the winter when the winery temperatures are cool and the fermentations can proceed slowly. After fermentation the wines are aged in French oak for approximately 18 months.

Deeply coloured, the wine bursts forth with an intense bouquet of blackberries and dark chocolate. The palate brings more finesse and balance, with a rich and complex array of dark berry, balsamic and spice flavours. It finishes elegantly with silky tannins.
