Di Giorgio’s unfaltering blend and favoured classic, this is always an elegant and finely structured wine that will cellar well. The breakdown is approximately Cabernet Sauvignon 60%, Merlot 30% and Cabernet Franc 10% – and always, 100% Coonawarra. Maturation is for 18 Months in French and American oak barriques and hogsheads (20% first use, 40% second use, 40% older).
