13.5ha of mature vineyard surrounding Di Giorgio’s historic Coonawarra winery is planted on the famous ‘terra rossa’ soil of the region. It might be soil known for producing deep and flavoursome Cabernets, but Chardonnay certainly shouldn’t be overlooked in this cooler climate zone, planted on a limestone ridge that contributes rich mineral character to whites and reds alike. A Chardonnay parcel selected for fruit complexity is hand-picked and sees a traditional wild yeast fermentation in oak with full solids followed by malolactic fermentation to build texture and develop further complexity. Maturation is for around 11 months in a combination of new and seasoned French oak.
