Serafino Sharktooth Chardonnay

This is named for the megalodon tooth that was found in Serafino’s Willunga vineyard, demonstrating the source of the geological material in the area. The parcel is rich in clay and nutrients, creating a more muscular version of the grape that you’d find in the sandier areas of McLaren Vale. Sympathetic with the natural grape flavours, this sees a wild fermentation partially in barrel. After ferment is complete, all parcels go to a combination of barrels (30% new) for approximately six months with frequent batonnage and partial malolactic fermentation.

The site and technique both make for a full-bodied style of Chardonnay; it’s very much built with a traditional mindset. However this vintage has seen a slight step back in oak use, which combined with early harvest in the cool of the morning has ensured there’s still good freshness and primary fruit to partner the nougat, smoky/spicy oak and deeply stone-fruited palate. Citrus and acidity smack all the way through the length providing a packed mouthful of flavour and drive.
