Serafino’s Black Label Shiraz is sourced from premium estate vineyards across McLaren Vale. Fruit is harvested at optimum ripeness before crushing and destemming, with fermentation conducted in small open fermenters over approximately eight days. Careful pump-overs and délestage are employed during fermentation to maximise colour, tannin refinement and flavour concentration. Following malolactic fermentation, the wine is matured for around 12 months in a combination of 25% new and seasoned French and American oak hogsheads, building complexity while preserving fruit purity and regional character.

The palate is full-bodied and generous, showcasing vibrant blackberry, blueberry and dark plum flavours interwoven with hints of mint, violets and spice. Fine-grained tannins provide structure and texture, while the integration of French and American oak contributes refinement and complexity.
