Made in the passito method, Vallepicciola’s Vinsanto is a sweet wine made from 70/30 Malvasia Bianca and Trebbiano grown on the estate in the Chianti Classico area. The grapes are harvested by hand at full ripeness, then stored in the property’s 17th century chapel for several months, until they have lost at least 60% of their water content. The fruit is then carefully pressed and fermented, leaving the must with around 150g/l residual sugar. The wine then matures for five years (over three years more than required by DOC regulations) in very small barrels before release.
2018
The wine is a dark amber colour with golden hues. Sweet notes of acacia honey, dried fruits, citrus and spice fill the bouquet. On the palate it is rich, sweet and enveloping, supported by a pleasant acidity that keeps it lively and fresh despite its voluptuous texture. A nectar to be reserved for special occasions, further cellaring will also be beneficial.
