The team at Down the Rabbit Hole adore this Spanish variety, believing it consistently over-performs in the vale, and mark it as a regional champion of the future. Named with a nod to biodynamic practice and the role the moon plays, this is organic Tempranillo, grown right next to the winery and planted in 2008. Fermentation occurs in traditional open-top vessels using wild yeasts with gentle cap management. After completing malolactic fermentation in stainless steel, it matures for 9 months in seasoned 300L French oak barrels.

A wine of layers, varying from deep and penetrating to spicy and perfumed, this has ripe cherry, plum, and dark berry fruits intertwined with subtle dried herbs, spice and earthy notes. The palate is supple yet structured, carrying the oscillating sweet/savoury balance and fine, savoury tannins.
