A blend of Sangiovese from elevated, sandy Seaview soils and Cabernet Sauvignon from red-brown clay-loams in the Willunga foothills, this is the team’s nod to Super Tuscans, and emulates the blend of the first wine Dom ever made with his parents. The fruit spends two weeks on skins and sees pump-overs, cooling and warming at various stages as winemaking works towards building bright primary fruit character and temper tannin structure. Maturation was for 10 monthe in seasoned French oak.

The split of varieties is usually around 50/50, but 2025’s warm and compacted vintage resulted in a final blend of 84% Sangiovese with 16% Cabernet. Pouring a dark ruby red, it opens with bold Sangiovese aromas of red cherry, black olive and spice. Cabernet creeps in on the palate, bringing medium- to full-bodied richness and structure with juicy berry flavours, dried herbs and a gently tannic, lingering finish.
