Fully destemmed but uncrushed Shiraz from Melton’s Krondorf and Koch sites was given a cool maceration and fermentation for up to two weeks prior to a gentle membrane pressing. The pressings and free run were combined prior to transfer to American oak barriques (15% new) for 28 months. The oak was specially chosen, having been seasoned for three years before being coopered using the immersion (water) bending technique rather than fire bending. This assists with a gentle, even oak influence perfect for old-vine, dry-grown Barossa Shiraz.

“The nose gives us aromas weaving through cassis, plums, chocolate, mocha, cold tea, blackberries and bergamot. Just a hint of charcuterie as well. There is great length here and satiny tannins.
