Selectively harvested from six different blocks over several weeks, this includes fruit from the 1910-planted vines adjacent to the Clare Valley Riesling Trail. The wine is vinified in open slate fermenters with plunging undertaken by hand followed by basket pressing, combined with larger static stainless steel fermenters with twice-daily pump-overs and the gentle pneumatic press. Post-blending the wine matures in French oak (~20% new) for around three months.
