Named in honour of St Ignatius (Inigo) of Loyola, co-founder of the Jesuit Order whose members established Sevenhill in 1851, the Inigo range celebrates the history and provenance of Australia’s oldest winery in the Clare Valley. The Pinot Gris is crafted in a fresh, contemporary style that highlights purity of fruit, texture and approachability while retaining varietal character. Sourced from cool-climate vineyards in the Adelaide Hills, the wine is made to showcase the aromatic and textural qualities of Pinot Gris. Gentle handling and cool fermentation preserve vibrant fruit aromas and natural freshness, while the palate develops a soft, rounded texture balanced by bright acidity. The 2026 release displays aromas of nectarine, ripe peach and red apple, accented by delicate floral notes. The palate is generous and textural, featuring pear, honeysuckle and stone fruit flavours with hints of apple blossom, ginger spice and iced tea. A soft, balanced acid profile provides freshness while maintaining a smooth, rounded mouthfeel and a clean, lingering finish.

The wine has a heady aroma of white peach and nectarine with a floral edge of frangipani and hibiscus. The palate is wonderfully clean and delicate, with a pure, honeysuckle fruit vibrancy.
