Named in honour of St Ignatius (Inigo) of Loyola, co-founder of the Jesuit Order whose members established Sevenhill in the Clare Valley in 1851, the Inigo Cabernet Sauvignon is a modern expression of one of the region’s most traditional varieties. The wine is crafted to reflect the provenance, elegance and longevity for which Clare Valley Cabernet Sauvignon is renowned.
Fruit is sourced from selected Clare Valley vineyards and harvested at optimal flavour maturity. Fermentation is conducted with careful extraction to build structure while retaining varietal purity, followed by maturation in French oak hogsheads to enhance complexity and refine tannin structure. Extended maturation and bottle development contribute to the wine’s signature balance of richness, elegance and cellaring potential.
2022
One of the best vintages in recent memory is showcased here with ripe blackcurrant notes, lifted aromas of dark chocolate, hints of dried mint and earthy spice. Soft, coating tannins give a velvet mouthfeel with flavours of aniseed, thyme and black olive.
