The Domaine de la Perrière Chablis is sourced from estate-owned vineyards surrounding Chemilly-sur-Serein, planted with vines averaging around 30 years of age on classic Kimmeridgian soils. Here, shallow topsoils rest above limestone-rich bedrock, encouraging deep root penetration and contributing to the wine’s hallmark mineral character. The fruit is harvested at full maturity before gentle pressing, fermentation and maturation in stainless steel tanks for 7 to 10 months, preserving both freshness and site expression.
2025
The warm, even conditions of the 2025 growing season delivered beautifully ripened Chardonnay with excellent fruit concentration, while retaining the natural acidity essential to the Chablis style, resulting in a wine of both generosity and precision. Unfortunately the trials of the previous two vintages (frost, hail and further climatic issues) impacted yields this year, and so we have only a small allocation.
Aromatically expressive, the wine reveals layers of lemon zest, white peach and crisp pear, complemented by subtle notes of oyster shell, chalk and flint. The palate is vibrant yet finely textured, with ripe citrus and orchard fruit flavours carried by a core of saline minerality. The estate’s preference for harvesting at optimal ripeness brings added depth and roundness, while the Kimmeridgian terroir provides structure, tension and persistence.
