Pecorino is a fairly rare variety, with only about 300 hectares planted in the Abruzzo and Le Marche regions. It’s called Pecorino because the grape bunch is shaped like a sheep’s head, otherwise having little to do with the cheese of the same name, other than being a fine partner at the table. The Fantini Pecorino vineyards are situated around the town of Ortona, on the Adriatic coast of the Abruzzo region and are in organic transition. To concentrate the aromatics of the grape, an inert atmosphere and cool temperature are employed in initial stages of vinification. 80% of the ferment is completed in stainless steel, with the smaller proportion sent to large-format oak.
This is a highly perfumed wine with full pulpy fruit aromas and hints of oak. Pears and white florals dominate the palate, backed by sweet spice. The mouthfeel is softly textured with good acidity.
