This native white grape of Sicily is grown by the Cusumano team on the high hills behind the city of Palermo. The site is behind a woodland reserve and enjoys a sheltered yet sunny microclimate cooled by sea breezes and altitude. The wine has had no oak influence, but extended maturation on lees in tank, followed by aging in bottle to build complexity and texture.
Citrus, white flowers and ripe stone fruit notes are the main characteristics of this Insolia. A touch of salinity and gentle acidity partner light- to medium-bodied texture and hints of green almonds. Insolia finds its perfect partner with seafood, but you could also partner this with risotto, goat cheese and light pasta dishes.
