100% Chardonnay was hand-picked, crushed and destemmed. In order to produce a sparkling with core purity and aromatics, the wine was inoculated with IOC (Champagne) yeast and fermented in steel. Seeing no oak treatment, this wine achieves its savoury balance and texture entirely through lees aging. It is disgorged in small batches with 7.5g/L dosage, guaranteeing freshness and a beautifully dry finish in every bottling.
