Although the north is known for its Amarone wines, Appassimento wines are also important in southern Italy, where warm sunshine and maritime influences allow grapes to develop exceptional intensity, and the technique enhances the acidity in these naturally ripe wines. This wine has seen a leggero appassimento (light drying) technique, leaving the grapes to naturally dehydrate on the vine for around 25 days before harvest. This traditional process concentrates sugars, flavour compounds and colour, producing a richer, more textural wine while retaining freshness. The blend combines 80% Negroamaro and 20% Primitivo, two of Puglia’s most important indigenous varieties, matured for an extended period in cement tanks to preserve purity of fruit and regional character. The resulting wine offers generous flavours of ripe black cherry, blackberry and plum, layered with notes of raisin, sweet spice and vanilla, supported by supple tannins and a warm, mouth-filling finish.
