Organic. 70% Verdejo and 30% Sauvignon was harvested from a parcel near the Alpera township at between 700 and 800 metres above sea level. The vineyards are exposed to the cool mountain breeze and the low humidity and wide open aspect allows a large diurnal range and therefore gret flavour complexity and acidity. Soils are bright red sandy clay with low fertility and plenty of chalk and limestone. The varieties are harvested in the cool of the night, then pressed quickly and fermented separately, at cool temperature in stainless steel. There was no oak maturation.

This is a lovely food wine, with gentle tropical aromas balanced by straw and green almond notes. Herbal touches and a whisper of bitterness keep it subtle yet balanced, acidity licking through the journey and making it an ideal partner for oily fish, oysters and mussel dishes.
