This zone’s name comes from “Taurasia,” an ancient pre‑Roman winegrowing village in the same zone. For a wine to be labeled Taurasi it must be at least 85% Aglianico must be grown within designated municipalities in the province of Avellino, including the town of Taurasi itself. The Riserva wines must have a minimum 4 years of aging, including at least 18 months in wood.
The Riserva is produced exclusively in the best vintages from the historic estate in Campo Cerasso (Torre le Nocelle). The Aglianico vineyards are subjected to summer thinning aimed at limiting production, while manual harvesting also carries with is a selection of the bunches. A long maceration period of 20 days comes after gentle pressing. Malolactic fermentation is carried out in barriques, then a third selection process is started while maturation progresses for 18 months in oak. The final blend is aged for another 30 months in bottle before release.
