The Upper Yarra is perfect for growing Chardonnay that has pure but concentrated flavour with the acidity to keep it light on its feet. The ferrous volcanic soils also provide terroir-bred character that is sucked up by this variety like a sponge. Hand-picked from a single block with a beehive at its lower point, the fruit is whole bunch pressed and wild fermented without juice clarification. It matures for around nine months in French oak (25% new). To ensure the freshness and minerality can shine, there is no malolactic fermentation.
