Cordero’s Dolcetto is sourced from an open area of old estate vineyards on the north-facing slope of Monfalletto. The clay soils are rich in magnesium and manganese oxide and sit between 220 and 260 meters above sea level. With little emphasis on oak (vinification and maturation was in a combination of stainless steel and neutral wood), this is very much a representative of the vineyard. Far from some sweeter-styled Dolcetto wines, this is a dry, vinous and medium-bodied wine. Tart and vibrant cherry aromas and flavours are wrapped around an amaro-like core of violets and bitter almonds.
