To retain a consistent style, grape variety proportions may vary with vintage conditions. This is always a Blanc de Blancs style (produced entirely from white grapes), from varieties popular in the south of France; including Ugni Blanc, Chardonnay, Chenin Blanc, Mauzac and Arièn. The base wines are carefully selected and blended to the house style. Secondary fermentation then takes place in tank to produce the bubbles. There is a light filtration before bottling
