Sir Paz Cherry Tree Rosé

Using 100% Merlot for rosé isn’t that common in Australia, where pinks are usually a blend of varieties and built to be sweetly fruited and quaffed in the sunshine. Named after the small cherry tree orchard that borders the block for this fruit, this rosé is from the very first cut of free run juice of hand-picked Merlot, fermented with a Provence yeast strain to boost the floral aromatics. This makes for a beautifully structured rosé with a core of fruit in the savoury spectrum, supported by pure red berry and apple varietal character. Named for the Cherry Tree which resides at the bottom of the Merlot block, It’s a rosé with a little more gravitas than the norm and the versatility to partner cheese and charcuterie or heartier red meat dishes.
