Totino Estate

Terroir Summary

The estate is situated on an elevated plateau of ancient Barossa Complex geology, among the oldest exposed rock formations in South Australia. Over millions of years these rocks have weathered into lean soils rich in ironstone, quartz and gravel, with naturally low fertility encouraging deep root development and concentrated fruit. Combined with Paracombe’s cool-climate conditions and significant day-night temperature variation, the result is wines that balance intensity with freshness, offering vibrant natural acidity, fine tannin structure and distinct mineral character.

Heritage

Totino Estate was established in 1998 when Don Totino purchased a dormant vineyard in Paracombe and began restoring it to production. Born in Italy and arriving in Australia in 1968, Totino had long harboured ambitions of creating a wine business that reflected both his Italian roots and the opportunities he had found in Australia. What began with 25 acres has since grown into a substantial family-owned estate of more than 100 acres. From the outset, the project was driven by a desire to bring European wine culture to Australian soil. Over the following decades, vineyard plantings expanded to include not only classic Australian varieties but also Italian cultivars that reflected the family’s heritage. Alongside a growing international presence, Totino has collected significant recognition, including a Top Gold award and Top 100 Wine placement for Francesco Reserve Shiraz and a Runner-Up finish in WineState Magazine’s World Shiraz Challenge. 

Philosophy

Every wine is produced from estate-grown fruit, with the family maintaining a hands-on approach throughout the growing season. From pruning and canopy management through to harvest, vineyard decisions are guided by a belief that careful farming is the foundation of great wine. The winemaking philosophy reflects Don Totino’s Italian heritage. The focus is on balance, food compatibility and varietal expression. Sustainability also plays a central role in the estate’s approach. Organic fertilisers, captured rainwater and careful land stewardship help support a healthy vineyard ecosystem, while preserving the natural environment that surrounds the property.

Beyond the Vine

Totino’s connection to community extends well beyond wine. The family actively supports a range of charitable organisations and local initiatives, including Foundation 21, Dream Ride, Variety – the Children’s Charity and regional bushfire relief efforts. These activities reflect a broader commitment to giving back to the communities that have supported the business throughout its growth.
