Terroir Summary

While Pasqua holds vast Pinot Grigio acreage in their home region of Veneto, much of that terrain is warmer and flatter. Harvesting early in Veneto risks yielding flat, under-ripe, or overly herbaceous fruit. Sourcing further west in Pavia introduces cooler night temperatures influenced by the Po River and the Apennine foothills. This microclimate slows sugar accumulation while allowing the grape skins to develop optimal stone fruit and blossom notes at a significantly lower potential alcohol level.

Philosophy

To capture a naturally lower sugar profile, the Pinot Grigio grapes are harvested slightly ahead of standard commercial windows. Following a gentle pressing, fermentation is conducted at strictly controlled cool temperatures to protect the volatile aromatics and lock in natural freshness. For the Rosé, a precise, brief period of cold skin contact extracts a delicate blush hue and subtle red-fruit nuances prior to fermentation. No alcohol is stripped post-fermentation, and absolutely no water dilution is employed.

Sitting perfectly between conventional table wine and the rapidly growing no/low category, Otto remains recognisably wine. It offers a bright, textural, and gastronomically versatile expression across both its white and rosé expressions.
